Craig’s Coffee is moving to 412 Peterboro!

It’s official! Earlier this month I signed a lease to open a coffee roastery and coffee bar at 412 Peterboro St., located between The Peterboro and Iconic Tattoo. It’s actually right next to where I was operating the pop-up coffee bar at 8º Plato Beer Store! Funny how things work out that way.

Over the next few months, myself and a talented team of individuals (fancy term for the architects, contractors, and consultants I’m working with) are working to bring this project to life. The coffee roastery build out will occur in two stages; the first stage will be installing the roaster and setting the foundation (no pun intended) for a full-service kitchen. Initially there will be a small coffee bar with limited hours, until the coffee bar expands into a full kitchen. (Curious to see which roaster I got? It’s this one.)

The second stage (which I’m calling “Phase 2”) will be the kitchen build out. The idea for the kitchen is that it will serve as a restaurant incubator where individuals and/or small businesses can come and use the kitchen equipment and sell their products. The space will also be available for these businesses to pop-up at and sell their product to customers. The coffee roaster will follow this exact model, too! Individuals and/or small business will be able to use the coffee roaster to roast their own beans. Alternatively, customers can buy green beans direct Craig’s Coffee and roast them up for their own business. Essentially it will be a “shared” roasting space where individuals can “rent” time to use the roaster and/or the kitchen equipment. I drew a ton of inspiration about this from my friend and colleague Izzy Fraire who opened the 444 Collaborative in Oakland, California.

Right now there isn’t a hard date or timeline for opening. After speaking with my architect and a few folks at the city, opening day will probably be between 4 and 6 months 🙁 That’s only because inspections are taking a really long time… presumably because everyone is opening new or existing businesses after this COVID pandemic.

So I’m shooting for a July 1st soft open date. September 1st of a hard open date.

Sales will continue as normal. However, I can no longer offer complimentary delivery for new customers outside of Detroit at this time. I apologize for this inconvenience. But I also offer flat rate shipping at $5 ($3.95 for a single bag purchase) so you’re already saving a few bucks on shipping.

In the meantime, I’m going to try and continue to write blogs (which have been lacking), posting on social media, and figuring out next steps.
