Mountain Water Process (or MWP) is a method of indirect decaffeination. Nearly all of the MWP decafs come from Descamex, which uses pure water from Pico de Orizaba—the highest mountain in Mexico.
The process begins with a chemical analysis to determine the conditions of the coffee seed, then using steam with controlled pressure, the beans are prepared for caffeine extraction. The caffeine is extracted using a water-based saturated solution and soluble coffee solids under flow, temperature, pressure and vacuum conditions.
The coffee seeds are then allowed to slowly dry through a triple drying system and polished the coffee to leave the finished product ready for roasting.
