THE COFFEE:

Bali Kintamani, Natural Process

  • Flavor Notes: Lemon drops 🍋, dark chocolate 🍫, strawberry 🍓, & a peach tea like finish 🍑

  • Process: Natural, dried on raised beds

  • Produced by: coffee growers organized through Subak Abian (SA) a traditional structure of farmer organization in upland Bali

  • Region: Kintamani Highlands of Central Bali, Indonesia

  • Varieties: Bourbon, (S795 & USDA 762) Typica, and Catimor

  • Altitude: 1,200 - 1,600 MASL

  • Soil: Volcanic loam

  • Notes from the Importer, Royal Coffee: Coffee is grown in the volcanic soils of Mount Agung along with citrus trees that provide shade and another source of income. Coffee production is typically organized around a Subak Abian, which refers to the ecologically sustainable irrigation systems developed more than 1,000 years ago by Hindu priests who practice Tri Hita Karana (the three sources of prosperity), a philosophy focused on the harmonization between the environment, humans and God. The idea of a natural processed coffee was suggested during Royal’s origin trip in 2009 to address an issue of water scarcity. It was an easy step to drying whole ripe cherry given that raised beds were already used for drying parchment. The project has been fully implemented and the results have been exceptional.

Costa Rica Brumas del Zurqui, Natural Process

  • Flavor Notes: Strawberry Jam 🍓, Grape Soda 🥤, Dark Chocolate finish 🍫

  • Process: Natural, dried on raised beds

  • Produced by: Juan Ramon Alvarado Rodriguez

  • Variety: Caturra

  • Altitude: 1,400 - 1,800 MASL

  • Notes from the Importer, La Bodega: Beneficio Brumas Del Zurqui is a micromill located in the Central Valley region of Costa Rica in the sub-region of Heredia. Neighboring farms deliver cherries to this micromill. Varieties include Villa Sarchi, SL-28, Bourbon, Gesha, Typica, Caturra, and Orange Bourbon. The mill is managed and run by Juan Ramon Alvarado Rodriguez and his family. They are fourth generation coffee producers and in 2003-2004, they began innovating their processing methods and expanding their processing infrastructure. They have also built out a cupping laboratory and roastery to ensure and maintain quality. In the past couple years Beneficio Brumas Del Zurqui has had to face labor shortages due to both the pandemic and workers moving on to other countries in search of other employment. However, Juan takes great pride in what he does and is glad to have been able to build a family, generate employment, and provide a positive social and economic impact to his community through coffee. Juan encourages the roasters who buy his coffee to roast with intention and wake up feeling motivated, cheerful, and with a desire to live and have new experiences! He hopes that the values and love of coffee he cultivates on the farm will be carried all the way through the pipeline from seed to cup.

Kenya Kayu AA, Washed Process

  • Flavor Notes: Pomegranate 🍊, Grapefruit 🍊, Hibiscus 🍫, bold and chocolatey finish 🍫

  • Process: Washed, fermented for 16-18 hours process in cement tanks and dried for 13-14 days on raised beds.

  • Produced by: Various producers from the Kayu, Njumbi, Rwathia and Mihuti villages, utilizing the processing station in Kayu.

  • Variety: Ruiru 11

  • Altitude: 1,650 MASL

  • Notes from the Importer, Red Fox Coffee:Kayu Coffee Factory is located in Central Province of Murang’a County’s Rwatha subregion, within the Kangema Division near Kangema town. It was established in 1964 and rests on a 7-acre piece of land serving Kayu, Njumbi, Rwathia, and Mihuti villages. Its membership currently stands at 1191. It’s the oldest coffee factory located near tea-growing zones. The factory lies about 1650 masl on lands rich with volcanic red soil. The area experiences temperatures ranging between 13-26 degrees Celsius. The longer rainy season runs between March and May while the shorter one comes between October and December. The area experiences a biennial production cycle with the early harvest being from March through May and the later second season being from October through December. In line with the rising awareness on the need to conserve the environment, the factory has built 4 wastewater soaking pits. Here, the water used for and acidified by processing coffee is allowed to soak back into the soil in key areas where it won’t contaminate the water table. Currently the factory does not engage in wastewater treatment.
